I say go for the Bun Bo hue (Spicy noodle soup). If you would like it they way "They" would eat it, get a side of chili paste. That's how I eat it, but be advised: it's not for the timid...

They have Pho for beginners, Pho for experienced, and Pho for the adventurous! The chicken and rice disk my wife had was very very good! It was like leaving Roanoke for an hour!
